Executive Chef | Banquet

The Executive Chef is directly responsible for the daily supervision, management and direction of the Banquet kitchen. The position requires practical creativity to provide a wide variety of innovative cuisine while maintaining profit goals. A thorough knowledge of food handling and preparation techniques is essential. The Executive chef is required to have a hands-on approach to training all ambassadors in the importance of consistency in both production and presentation. Direct responsibilities include daily supervision of the food production schedule, staffing and hiring of all culinary personnel, management of the variable kitchen operating costs including food and labor, culinary event staffing and inventory management, product ordering, sanitation and safety.

KEY RESPONSIBILITIES

  • Monitor, analyze and control all labor and food costs; prepare the appropriate reports, charts and schedules to ensure budgets are met
  • Manages kitchen staff; including training, counseling, disciplining, terminating and complete performance evaluations
  • Manages all cooking operations, including methods, portioning, and garnishing
  • Requisition food and equipment, giving specifications, quantities and quality descriptions
  • Ensure attractive presentation and quality of all food and dishes for very high end clientele
  • Meet guest needs by developing and maintaining effective relationships with both internal and external customers and by promoting a customer service orientation within the organization
  • Perform other reasonable job duties as requested by supervisor

KEY SKILLS REQUIRED

  • Willingness to set a high standard in the kitchen through leading by example
  • Maintain excellent knowledge of current culinary trends 
  • Consistently remain self-driven, innovative and posses the commitment become an industry leader 
  • Knowledge of local health rules, regulations, and food handling.
  • Knowledge of P&L, food and labor costs and menu costing.
  • Proven ability to effectively lead and train a diverse workforce.
  • Operate with passion, respect, integrity, dedication and empowerment to all internal and external guests
